Honey Butter

I got this recipe from a good friend one year when we went camping together. This friend is so amazing that she made homemade scones while we were out camping in the wilderness and she served up this amazing homemade honey butter to go with them. So delicious! I mean scones and honey butter are quite a treat when you're enjoying all the creature comforts of home, but out camping in a tent in the middle of nowhere, they taste like heaven itself. Seriously, you should try it. Here is her very simple yet amazingly tasty recipe. I threw all of the ingredients in my Bosch and mixed away. The recipe makes a TON but I believe it would freeze sort of OK or keep for a few weeks stored in your fridge.

Honey Butter
6 cubes butter, softened
1 can sweetened condensed milk (chilled)
2 tsp corn syrup
2-3 tsp cinnamon (to taste)


Mix all together and serve with something warm, doughy, and homemade. Hope you go camping soon and enjoy this straight-from-heaven-to-your-mouth deliciousness!

Pebbles to Sand 3: Healthy Eating

 Last time I talked about breaking exercise into bite-sized chunks to get that pebble into your jar each day.  Today I will talk about nutrition.  Eating healthy doesn’t come easy for me.  I love sugar and carbs.  I’ve pushed myself for months at a time to clear them from my diet, but truly, I don’t enjoy myself.  All I think about is the deliciousness I’m missing out on, and it makes me mad. 

So instead of going cold-turkey and making me and my family miserable, I turned the nutritious eating pebble into grains of sand I can stomach.  Baby steps.  I’m not a health expert (obviously), but here are some ways I’ve done better at promoting healthier eating in my household. 

1.  Annihilate the worst culprits.  I picked a few of the worst things we consume to cut out of our diet.  These included chips, pop and Ritz crackers.  At first, we missed these (especially Ritz crackers—they were almost a staple).  However, over time we have missed them less and less.  We still aren’t perfect, but we’ve made a step in the right direction...which makes it easier to take the next step...and then the next. 

2.  Replace Junk with Spunk.  Sugar and Fat make you hungrier (you’ll want to graze like a cow).  Vegetables, fruits, and whole grains give you more spunk, because they are more filling than junk. 

3.  Savor your food.  This sounds silly, but it’s easy to inhale food.  That leads to overeating.  Slowing down gives your body time to digest food and tell you it’s full.  One friend cuts her meal in half when she eats out to keep from overeating (take the other half home for another day...or for hungry teenagers).  Savoring food brings more joy.  Have dessert, but limit yourself and you will find that each bite is heavenly.  Even vegetables are exciting when you savor them.  I never knew carrots had so many flavors until I forced myself to eat them for my midmorning snack. 

4.  Stay on schedule.  Don’t skip meals.  Limit snacks to certain times of day, and don’t eat too close to bedtime (your body won’t have time to burn it off).  Having a routine will help resist impulse eating which will only make you gain weight and have gloomy thoughts. 

5.  Watch Portion Sizes.  Read nutrition labels for an idea of what a correct serving size is.  If you’ve ever seen comedian Brian Regan talk about serving sizes...it’s a riot.  He tells how the serving size for Fig Newtons is 2 cookies.  He then says that's CRAZY!  He eats them by the SLEEVE.  I think a lot of us overeat if we never look at serving size labels.
    
6.  Take charge of your cravings.  Sometimes boredom can cause you to overeat.  So keep yourself busy and break routines that cause you to graze-eat.  Drink enough water.  Many times, we mistake hunger for thirst.  When you feel hungry (and it’s not your normal time to eat/snack), drink water and force yourself to wait a half hour.  Find something to do (not in the kitchen), and your hunger will disappear.

Organizing Puzzles

This tip is something I learned from my mom.
Growing up we had a game closet and my mom had that baby ORGANIZED like a champ!
Now, whether us kids kept it that organized is a whole other issue...remember there were NINE of us!!  I highly doubt we kept it in tip top shape.
But nonetheless, my mom had some great plans that she implemented that I have now found myself using.
And the first one I will showcase today is PUZZLES.
A few of my kids really really like puzzles.
So I have picked up quite a few over the years, usually just in the dollar section at Target.
Needless to say, the flimsy and cheap cardboard boxes do NOT hold up well over time and get bent and ripped, therefore allowing little puzzle pieces to fall out and get lost.
Mom's Plan:
Cut the picture of the actual puzzle off of the cardboard box.  Throw out all those bulky boxes!

Put all the pieces into a ziploc bag and insert the picture.
(These small dollar puzzles only needed a quart sized bag)

Make sure you count out the pieces and make a note if there are any missing.

Close it shut and put them all in a basket or bin and you are good to go!

Now your little ones can enjoy their puzzles and you can feel a bit more organized about it!!

Shower Floor Cleaner!!

I dont know about you, but I have tried for YEARS to get my shower floor clean!
We have a cultured marble shower, but the floor is a big piece of white plastic stuff with bumps on it for tread.  It has been impossible to keep clean!
I have tried bleach...steam mopping it...hydrogen peroxide...baking soda...vinegar.
Nothing would touch the dirt embedded in that plastic!
Until...
I came across this method on Pinterest here where it suggested using Borax.
So off I went and here is what I was working with about 5 minutes into it...
And after scrubbing for about 10 minutes with just the Borax and a little sponge (and a little water to wet it down), it looked more like this...
The picture definitely doesn't do it justice.
You will just have to take my word for it...it works!!
And such a cheap and easy solution too!

Baked Mac & Cheese

A shout out to Charissa who provided the family this little gem. I must caveat by saying that growing up I liked it when mom made mac and cheese. She put in just the right amount of milk and cheese to make it taste delicious. I have never, ever liked the mac and cheese from a box - DISGUSTING! I have to wear a blindfold and mask if my kids ask me to make some for them. I do not like to eat things that are fake and that would definitely include fake cheese. Awful stuff. To add to the mix of mac & cheese recipes I don't like, my husbands family's secret recipe is a mac & cheese that they add copious amounts of canned milk to which makes it for all intents and purposes a soupy mass. Occasionally, if you're lucky, you may find some evidence that cheese was included but that is a rare event and a cause for celebration. Since I don't care much for milk, eating a bowl full of pasta swimming in milk has never been my favorite thing either. With that being said, I have recently acquired several very delicious baked mac and cheese recipes which remind me of those bygone days when my loving mother served up mac and cheese with just the right amount of this and the right amount of that. Without further adieu, the recipe:

2 1/2 cups macaroni noodles
8 oz shredded sharp cheddar cheese (or Colby Jack)
12 oz small curd cottage cheese
8 oz sour cream
1/4 cup parmesan
1 cup bread crumbs
1/4 cup butter, melted
salt and pepper

Cook noodles and drain.  In 9x13 pan, stir together the noodles, cheeses, sour cream, and salt and pepper.  In another bowl, mix bread crumbs and butter.  Sprinkle topping over macaroni.  Bake 30-35 min. or till golden.

Recipes really don't get much easier than this so I feel the pictures below are pretty self-explanatory.  If you want something quick, easy, and delicious, this is a good recipe to have on hand.  Enjoy!
